Greg:
Greg Ewing started Finca Ipe with a strong and clear vision 11 years ago and has actively managed the farm and shaped its direction since its inception. He has learned sustainability by working to create it - with plenty of mistakes and successes in the process.
Greg has been a student of Biodynamics® for four years and still greatly enjoys watching the dynamic changes that implementing Steiner's and Schauberger's practicum can bring about in the land, as well as in the people living and learning with it.

Sabine:
Born in Augsburg , Germany Sabine finished her Biology Degree and thesis shortly before first visiting Costa Rica in 1991. She fell in love with the beauty of this gorgeous habitat and it wasn't long before she back, taking a position as one of the directors of the Profelis Project – a wildlife rescue centre. The focus of the centre was to provide refuge for a diverse array of wild cats from Ocelots to the weasel-like Jaguarundi. Over eight years later, she decided it was time for something new.
Sabine came to live with Greg at Finca Ipe in 2000 and their son Max was born in April 2001. Her arrival was timely given the level of animal care that was now required at the farm. She is responsible for caring for a host of animals here from goats, sheep and chickens, to guinea pigs, dogs and four cats (of a rather more domestic variety than in her previous role).

Evan:
Evan began studying ecology with the Surfrider Foundation in search of clean ocean waters, which was important to him given his love of surfing. He then realized that agriculture forms the number one polluting sector of ocean and land. Gardening and organic agriculture came naturally and soon he spent good portions of his life studying and working in the fields of Agro-ecology and Permaculture. After completing many seasons and courses in Santa Cruz, Evan graduated with a Bachelor of Arts in Environmental Studies from UCSC. Within his period of study Evan has taken time for field studies and work abroad in the fields of Natural History, Ecology and Permaculture in Belize, Guatemala, Costa Rica, Peru, Ecuador, Hawaii and California.
In a short period Evan has gained much experience in the fields of Agroforestry, Aquaculture and Ecological Design. He received his first Permaculture Design Certificate in 2001 and then went on to become a certified teacher. He continues teaching Permaculture Design Courses and works in the field of integrated agricultural systems and regenerative design in Costa Rica and California. Evan’s dedication to the integration of Ecology, Culture and Agriculture is an inspiration towards the vision of a healthier, more abundant future.

Itai:
Itai was born and grew up in Israel. In 2000 he refused to enter the Israeli army and went looking for a more sustainable and peaceful way to live. In 2001 he was certified as a permaculture designer by the Sustainable Living and Demonstration Center ADAMAMA in Israel. For the next two years he was a member of the ADAMAMA community, learning, experiencing, and teaching about sustainability.
In 2003, Itai studied the GROW BIOINTENSIVE method at the Ecology Action Center in California. Joining with the Sustainable Solutions Caravan and Stephen Brooks, the founder of Punta Mona, Itai journeyed from Berkeley to Costa Rica in a bus running on used, recycled vegetable oil, giving workshops and demonstrating sustainability in Mexico, Guatemala, El Salvador, Nicaragua and Costa Rica. In 2004 Itai returned to Israel, opening an agricultural design business and teaching and designing permaculture systems. 2006 brought Itai back to Punta Mona to teach a series of Permculture courses and design and build Punta Mona’s amazing chinampas. He is currently working between Colombia, Costa Rica and Israel, teaching and farming, playing music and living always as sustainably as possible.
